Have you ever created a dip (or anything for that matter) that left you patting yourself on the back while you devour half the bowl, as well as an entire bag of chips with it?
Yeah, that happened with this Greek Yogurt Spinach Guacamole. If I didn’t have someone to share this delightful dish with, I may not have reigned in my animalistic tendencies.
If you’ve been a With Peanut Butter on Top follower over the years, you know that if I can put an avocado on it or in it, I will. And why not?!
It’s considered a nutrient-dense fruit (yep, it’s a fruit!) that has a rich, yet subtle, flavor and has the perfect creamy consistency. You can use it in replacement of so many things. And it’s a heart-healthy fat. Win win in my book if you ask me.
Holy creamy, delicious guacamole goodness. “That’s all I have to say about that.” (In my best [not really] Forest Gump voice).
Once you make this, you’ll be thinking of all the things you can add it to, scoop it on top of, spread it all ov… wait..never mind.

Easy Slow Cooker Mexican Style Shredded Chicken
You’ll love it. Just ask my husband.. I caught him standing at the fridge with a fork and the container of leftover chicken.
Ok, enough self-pats…
As you can see, all you need is a handful of ingredients and a handy dandy blender or food processor. I use a food processor for all of my blending. I find that it helps to give a more even consistency without having to keep stirring it with a spatula like you do a blender. Maybe that’s just me.
The blender hardly gets used. Maybe for smoothies? Well, we all know I’m not much of a smoothie person, as delicious as they may be.
Step 1 of 1: Toss all ingredients into a blender/processor. Yep, that’s truly all there is to it. Perfect, huh? I thought so.
Within minutes you’ll be dipping a chip, or two (maybe five), directly into the processor. Or is that just me when I cook? Yeah, I didn’t think so. 😉
Serve this delicious and simple guacamole with your favorite tortilla chips, carrots, celery, or even sliced cucumber.

Greek Yogurt Spinach Guacamole
Ingredients:
- 2 cups fresh baby spinach
- 2 medium avocados (peeled and pitted)
- 1/2 cup 0% plain greek yogurt
- 1/4 cup red onion (chopped)
- 1 tbsp fresh lime juice
- 2 cloves garlic (minced)
- 2 tbsp Chopped cilantro (or 2 tsp dried cilantro)
- 1/2 tsp. sea salt
- Pinch of black pepper
Instructions:
- Place the baby spinach, avocados, yogurt, red onion, lime juice, garlic, salt, pepper, and cilantro into a blender or food processor.
- Blend until it reaches a creamy consistency. If you need to, run a spatula along the outer edges of the container to full incorporate the seasonings.
- Garnish with a combination of chopped tomatoes, red onion and cilantro (optional).
