This One Pot Sausage Tortellini Tomato Soup is 100% comfort food, but lightened up for you to enjoy without the guilt. It is easy to make, coming together in one pot, and loaded with vegetables, turkey sausage, herbs, and cheese tortellini.
No pork used in this recipe, all low-sodium ingredients/options, and no flours used. Serve this with your favorite baguette or my Easy and Quick Garlic Cheese Bread!

ONE POT SAUSAGE TORTELLINI TOMATO SOUP
This soup recipe is one of those wonderful, easy and quick-to-make kind of recipes. One that requires little effort and only uses one pot to cook the entire meal! Because washing dishes simply isn’t on the to-do list some tiresome evenings. Am I right? Let a pot soak overnight. Or do what my parents did and have the kids clean up. It’s only fair, right?
One of the things I love most about this recipe is the delicious tomato soup base that comes together so effortlessly. I enjoy the rich, creamy, tomato flavor. Then when you add in a load of vegetables, turkey sausage, and cheese tortellini? It’s an absolute delight with every spoonful!

A FEW COOKING TIPS AND CONSIDERATIONS
As stated, everything comes together in one pot. Make sure all of the vegetables are chopped and everything is prepped, so that you can simply toss as you cook, making it much easier and less stressful as you’re standing over a hot stove!
- SAUSAGE: Many recipes use Italian sausage, which will certainly give the soup a superb amount of flavor, but I chose to use turkey sausage cooked in olive oil and seasonings to keep things a bit on the lighter, more heart-healthy side. Feel free to use pork sausage if that is what you have on hand! You can omit the sausage to make this a meat-free meal.
- TORTELLINI: You can use fresh or frozen cheese tortellini. If using frozen, just make sure to pull it out of the freezer at the start of cooking so that it has time to thaw before being added to the pot. Add this, as well as the kale, within a few minutes of the recipe being finished. You don’t want to overcook the pasta or the kale.
- CREAM: Most creamy soups call for heavy cream to be added. With keeping this on the lighter side, I chose to use (as always) half and half.
- VEGETABLES: Get creative with this recipe! If you don’t have all of the vegetables listed on hand, then make substitutions. Swap spinach for kale, add peas, zucchini or carrots instead of bell pepper.
- SODIUM: Most of the products used (tomatoes, chicken broth, etc) are either l0w-sodium or no salt added products. I choose to cook with these so that I have the option of controlling the amount of sodium that goes into my meals. Use what you have on hand or prefer. Just make sure to add salt to taste, to the soup. Keep this in mind if you use regular canned tomatoes or chicken broth.
- REHEATING: Keep in mind, pasta has a tendency to soak up the liquids in a soup or sauce as it sits. When ready to reheat, add more broth and seasonings (to taste) to be able to enjoy leftovers the second or third time around. I would also recommend adding a tablespoon or two more of tomato paste – depending on how much of the soup you’re reheating. This will help to keep the soup base creamy.
HOW TO MAKE THIS SOUP

- Brown the turkey sausage. Once halfway cooked, add the peppers, onions, and mushrooms.
- Once the onions are translucent, add the garlic and cook for 1 minute.
- Add in the chicken broth, tomatoes, tomato paste, and seasonings.
- Stir and simmer!
- Add in the half and half, tortellini, and kale.
- Simmer and then serve!

You can make this soup in the crock pot – with a few alterations to the cooking process. Brown the sausage in a pan prior to adding it to the crock pot.
- Place the browned sausage, onions, peppers, mushrooms, garlic, tomatoes, broth, tomato paste, and seasonings into the crock pot. Cover and cook on LOW for 7 hours or HIGH for 4 hours.
- Uncover and stir in the half and half. Add the tortellini and stir once more. Cover and cook for an additional 40-45 minutes. During the last 5 minutes, add in the kale or spinach.
- Season with salt and pepper, to taste.
- Serve garnished with red pepper flakes, parmesan cheese, and basil.

One Pot Sausage Tortellini Tomato Soup
Ingredients:
- 3 tbsp olive oil, (or less *SEE NOTES BELOW)
- 1 lb ground turkey sausage, (or Italian pork sausage)
- salt and pepper, (to taste)
- 1/2 tsp lightly dried basil
- 1 1/2 tsp Italian seasoning
- 1/2 green bell pepper, (chopped)
- 1 small yellow onion, (chopped)
- 4 oz baby bella mushrooms, (sliced)
- 1 tbsp minced garlic
- 4 cups unsalted chicken broth, (or chicken stock/vegetable broth)
- 14.5 oz can unsalted crushed tomatoes
- 14.5 oz can fire roasted diced tomatoes
- 2 tbsp tomato paste
- 2 tsp salt, (more or less - to taste *SEE NOTES BELOW)
- 1 tsp black pepper (more or less - to taste)
- 1 tbsp lightly dried basil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 cup half and half, (or sub with heavy cream)
- 10 oz cheese tortellini, (fresh or frozen (thawed))
- 1 bunch kale, (removed from stems and chopped)
Instructions:
- Place a large soup pot over medium-high heat with olive oil.
- Once the olive oil is heated, add the sausage and break it apart as it cooks. Season with salt, pepper, Italian seasoning, and basil. Once it has cooked halfway, add the peppers, onions, and mushrooms. Cook until the onions are translucent, approximately 3-4 minutes.
- Add the garlic and cook for 1 minute. Stir well.
- Pour in the chicken broth, stirring to incorporate and to remove any brown bits that are on the pan from cooking the sausage. Add in the tomatoes and tomato paste. Whisk/stir until the paste is mixed through.
- Allow it to come to a boil before adding the salt, pepper, basil, Italian seasoning, and garlic powder. Cover and allow to simmer for 10 minutes.
- Add in the half and half, kale, and tortellini. Cook for 4-5 minutes or until the tortellini is cooked through and the kale has wilted slightly.
- Serve garnished with red pepper flakes, parmesan cheese, and a sprinkle of basil.
